Making Pasta with 'Top Chef' Nikki Cascone

Bravo star and Huntingtonian works her magic at The Meat House in Roslyn.

Sure it’s easy to buy pre-packaged pasta off the grocery store shelf. But when it comes to pasta made from scratch, nothing tastes fresher. Still, it’s a process – some may it call a labor of love.

Former Bravo "Top Chef" and Huntingtonian Nikki Cascone was at The Meat House in Roslyn Saturday teaching home-chefs what goes into making pasta.

When all was said and done, Cascone, who appeared on Bravo in Season 4, topped the pasta with a sauce made of sausage, tomatoes and other ingredients she picked up at The Meat House.

The ingredients for Cascone’s homemade pasta are 3-1/4 cups flour, 4 eggs, and a pinch salt. Next comes the magic, which includes mixing, kneading and rolling the dough before putting it through a pasta-cutting machine, all the while making sure the dough does not feel wet. Students also learned how to cut the pasta into various shapes, including fettuccine and ravioli. 

Cascone's class was part of The Meat House's one-year anniversary celebration in Roslyn. The festivities also included a February visit by former NY Mets, Mookie Wilson, who cooked up his signature chicken dish.
